Any oven thermometer to double check the setting on the dial. You could check it by putting a pot of water in the oven and raising the temp slowly until it just boiled - 212F/100C and checking the reading.
Assuming you don't have a thermocouple thermometer, like I do.
If the FIMO meter is about the same price as one in the grocery or hardware store, buy it

Meat thermometer. is it the type that can go in the oven? or one that has to be kept out of the meat and just used for spot checking?

You can use any temp- broiling, or baking- or method like frying or grilling or Crockpot to cook the meat. Put the thermometer in the thickest part of the meat to check the temp.

When learning to cook meat (beef or venison) it's better to err on the side of too rare than too done. You can always put it back on the fire. Chicken will run clear juices when it's done and pork needs to be cooked through.

Bon Appetit!

I'd cook it at 350 for an hour or so.

You should have a meat thermometer that you can leave in. The digital ones work well. You can set the desired temp, and it will alert you when it is done.

120 will be very rare. However, you should take it out of the oven at 120, and then cover it and let it rest until the temp reached 130. (This may take 20 - 30 minutes.) DO NOT remove the thermometer until you are slicing the roast. You'll let valuable juices escape if you take out the probe.

Enjoy
